Pick up pre-made pizza dough or crust, and have dinner on the table with just a handful of ingredients for this crowd-pleasing guanciale pizza.
Serves: 4 depending on crust size.
Ingredients:
Favorite pizza crust-- 12-16"
1/4 cup of your favorite tomato sauce
8 oz. Red Table Meat Co. guanciale
1/2 cup goat cheese
20 sage leaves
1 medium onion, sliced
Directions:
Fry guanciale over high heat, in a pan large enough to handle all the meat in a single layer. Cook for 5-8 minutes, stirring constantly to avoid burning one side. When crispy and golden pour into a colander to drain the fat. Reserve the fat.
Use the reserved guanciale fat to saute the onions approximately 5-6 minutes, until just softened (onions will cook more on the pizza).
Stretch or roll out the pizza dough. Place dough onto peal or baking sheet lined with semolina or cornmeal.
Spread a thin layer of tomato sauce on dough. Sprinkle the onions, guanciale, goat cheese, and sage leaves on top.
Cook in oven 6-10 minutes at 400 degrees. You want a crisp bottomed crust and bubbling toppings.
