Pancetta Pork Meatballs
1 lb Red Table Meat Co Pancetta
3 lb Red Table Meat Co. Italian Fennel Sausage, if not available- Ground Pork
2 Tbsp Fresh Thyme
4 Tbsp Fresh Parsley
3 Tbsp Minced Garlic
1 Tbsp Red Pepper Flakes
Salt to taste
Preheat oven to 425 degrees
Remove skin from Pancetta
Dice Pancetta and saute in pan until golden brown.
Allow the cooked pancetta to cool to room temperature.
Mix sauted pancetta and rendered fat with the remaining ingredients
Roll into desired meatball size
Based on the size of the meatball, bake 10 minutes for each ounce.
